Healthy Shamrock Shake!

Green Shakes are amazing!!! This month’s recipe is for our Shamrock Shake!

No not this one:

Dr. Cotey is the smoothie King in our house. This is his recipe for our morning Green smoothies that so many of you see us carrying around.

Dr. Cotey’s version of a Shamrock Shake:

¾ apple  (why ¾? Because our children always want a little snack and we lose ¼ of each fruit to them!)
¾  pear
1 Avocado (makes your smoothie creamier rather than so fibrous)
1 inch of ginger
2 inch root of turmeric
3 large handfuls of spinach
4 scoops SP Complete 
1 tablespoon Lemon Juice
1 Tablespoon Lime Juice
Water
6 icecubes

With th20160224_045123 (1)e Lemon and Lime juice – we usually use fresh lemon and limes… about 1/3 of a lemon and a ½ of a fresh lime is plenty. When we do not have fresh fruit we have used  this from Wholefoods as it is not from concentrate.

Now do not ask me how much water. On our Blendtec when all the food is in, the water usually hits about 4 cups (that is not 4 cups of added water, it is simply the line we hit once we add water to the full blender)

On the days when we do not have an apple and a pear, we simply use just one whole one of whatever fruit is available. Lately we have been limiting the fruit even more as it is still a source of sugar and adding a bit more lemon, lime or ginger and then calling them Zinger     Smoothies.

Smoothies are to be fun and once you have a basic one…play with it. If you leave out an apple or pear and substitute 5 frozen pieces of pineapple…great you will have a more tropical taste.

Happy Healthy Valentines Day

We asked. You spoke. We LISTENED.

Moving forward, monthly Dr. Cotey or Dr. Amanda will be sharing recipes that we personally use in our everyday life.

Although we can talk/write for days about health, the purpose of this “Blog” is to provide you with what you want as well as to help us live out our purpose in life. There is an urgent problem facing our community where families are being compromised due to misinformation about health. We are determined to passionately restore family health and animate future generations.

In our office we restore health through our hands through a specific vertebral adjustment; however this is not the ONLY key to health. What goes in your mouth, in your brain and what you do with your body the rest of the day will contribute to your true level of health.  Let’s be honest, I can adjust you every day of your life, but if when you leave my office, you never work out, you visit a McDonald’s drive through for lunch, focus on all the negatives in life, eat more processed, packaged fake food and then sit and watch devil-vision (Television) for the rest of the night….I can NOT make you healthy.

This Blog is to be fun, honest and real. Sometimes it may be a bit longer, other times it may simply be a recipe we love.

So let’s do this! February means Valentines Day! Valentine’s Day means…CHOCOLATE! We love eating a healthy diet, but everyone one of us (Dr. Cotey included) enjoy Chocolate! So below are two of our family’s absolute FAVORITE recipes involving Chocolate!

*I don’t know if I need to do a disclaimer but if so here it is…Yes we eat a mainly wheat free, dairy free diet. We focus on cooking many paleo meals.  We are both doctors but we are also human beings people! We enjoy treats once in a while – icecream (Dr. Amanda), a bun (only Dr. Cotey) with our Brat and Beer (both of us) in the summer time. As we explain to our girls, treats are just that…Treats. They are not to be devoured in high quantities or high frequency. Many probably most of the recipes we will share are not our creation. They are however…super tasty and still fit into our personal lifestyle. These recipes bring us JOY! I hope they bring your family JOY as well!

If you trust me and know I would never lie about peanut butter or chocolate…then just start gathering the ingredients now.

P.s. To make this even more Valentine’s Day Chocolate themed – use almond butter instead of peanut butter and add in 1 tablespoon of Cacao Powder…Now you have Chocolate Chocolate Chip Cookie Dough Bites! YUM!

Ingredients

  • 1 can of chickpeas, well-rinsed and patted dry with a paper towel1
  • 2 teaspoons vanilla extract
  • 1/2 cup + 2 tablespoons Natural peanut butter(Don’t even try with regular peanut butter! They’ll come out oily. You MUST use natural peanut butter.)
  • 1/4 cup raw honey
  • 1 teaspoon baking powder
  • a pinch of salt if your nut butter doesn’t have salt in it
  • 1/2 cup chocolate chips (can useCarob chips if you want)

 

 

  1. Preheat your oven to 350°F / 175°C. Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and the top to get the little chunks of chickpeas and process again until they’re combined.
  2. Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky.
  3. With wet hands, form into 1 1/2″ balls. Place onto a Silpat or a piece of parchment paper. If you want them to look more like normal cookies, press down slightly on the balls. They don’t do much rising.
  4. Bake for about 10 minutes. The dough balls will still be very soft when you take them out of the oven. They will not “set” like normal cookies.
  5. Store in an airtight container at room temperature (or in the fridge) for up to 1 week. (I have no personal thoughts on this as we make this and eat them all in one evening!)

As for this month’s smoothie – let me introduce you to our very own creation: Black Forest Cake – a Dark Cherry Chocolate Smoothie!
 

Smoothies are not an exact science. I love that I can move the flavor of almost any smoothie! So stop making smoothies so difficult – blend them – taste them – add more of what you want it to taste more like!

Here are some rough estimates but a complete ingredient list: (please use organic when possible…I will not be writing organic next to every ingredient!)

1 cup Dark Cherries (we love using frozen – helps make smoothie cold without watering it down)

– 1 TBSP Cacao Powder

– 1 ½ cups Coconut milk (we buy non-sweetened) (can use canned, tetra-pack or carton)

– ½ an Avocado (makes your smoothie SMOOTH!)

– Small handful spinach

– 2 scoops Whey protein

* Sometimes we add an extra scoop of Orgain Chocolate Protein Powder (already a little sweeter so will sweeten the taste up nicely)

*Personalize it!

* I always want extra dark cherries so the cherry taste is strong

*If you love the chocolate flavor – add more

* If you want it thinner – add more coconut milk

*If you want it fluffier – add more protein

Last Note – we have switched the fruit to Raspberries and it will still be amazing!
