Paleo Pumpkin Recipes

Although the rest of the world would like to convince you that it is time to start buying Christmas decorations, with leaves just beginning to change and the return of crisp cool mornings we are focusing on fall flavors! Let’s look at some Paleo Pumpkin Recipes.

Why Paleo Pumpkin Recipes? When asked for an opinion on diet, Dr. Jordan typically recommends removing all forms of wheat, dairy and processed sugar from your diet. If you are searching for a recipe and want to be sure it will be wheat, dairy and sugar free, using the term paleo will always give you safe quick results!

 

We suggest to search Paleo because if you find a flour-less (meaning wheat free or gluten free) recipe, it may still contain dairy and/or sugar. The same applies if you search for a dairy-free option. Commonly these recipes with have some form of gluten or sugar as an ingredient.

Paleo Pumpkin Pancakes 

     – ½ ripe banana
     – 2 eggs
     – 2 Tablespoons pumpkin puree
     – 2 Dashes Cinnamon
     – Dash Nutmeg
Instructions
     – Mash the banana and then mix in the pumpkin
     – Add the spices, mix until uniform.
     – Add the eggs and beat well with fork or whisk
     – Heat pan on medium heat add a little butter or coconut oil to the pan before adding some of the batter. This recipe makes two large pancakes. Top with almond butter, fresh fruit, maple syrup or enjoy as is!

                                                                            Paleo Pumpkin Cheesecake Dip

     – 1 can of pumpkin
     – 2 cans of coconut milk, use ONLY the coconut cream (the solidified part)
(save the remaining milk for a smoothie, protein shake or homemade popsicles)
     – 1 teaspoon vanilla
     – 1 teaspoon cinnamon or pumpkin spice (more if you like)
     – 1/4 cup maple syrup (the original recipe calls for 1 cup coconut sugar – this is WAY too much sugar for our taste, plus we like the maple flavor better. Add more if you need it sweeter)

Instructions

– Combine all ingredients until smooth, using a food processor can help                                              – Dip in apples, bananas, grapes, strawberries, whatever you like.

      Paleo Pumpkin Coffee Cake

     Ingredients
    – 1/4 cup melted coconut oil
    – 1/4 cup maple syrup
    – 1/4 cup coconut sugar
    – 1/4 cup canned pumpkin
    – 4 eggs
    – 1 cup almond flour
    – 1/4 cup coconut flour
    – 1/2 teaspoon baking soda
    – 1 1/2 teaspoon pumpkin pie spice
    – 1/2 teaspoon cinnamon
    –  1/2 teaspoon salt

Crumb Topping
 – 1/4 cup coconut flour
 – 1/2 cup almond flour
 – 2 Tablespoons coconut sugar
 – 1/2 teaspoon cinnamon
 – 2 Tablespoons maple syrup
– 2 Tablespoons coconut oil
Instructions
  • Preheat oven to 325 and line a 9X9 pan with parchment paper.
  • Make the crumb topping first: in a small bowl, combine coconut flour, almond flour, coconut sugar, cinnamon, maple syrup and coconut oil. Mix well – should resemble wet sand. Set aside.
  • In a large bowl, combine coconut oil, maple syrup, coconut sugar and pumpkin. Mix well.
  • Add in eggs and mix well.
  • Add in almond flour, coconut flour, baking soda, pumpkin spice, cinnamon and salt. Mix until no dry pockets remain. Pour into prepared pan and top with crumb topping.
  • Bake for 45-50 minutes.
  • Enjoy!

Paleo Banana Cream Pie Bites

Paleo Banana Cream Pie Bites

During the month of May we try to make sure and celebrate mom’s! Mom’s needs treats too and here is a healthy snack that is not only guilt-free but very easy to make with the kids as well!

Banana Cream Pie Bites!

Ingredients:

  • 2 bananas (not overly ripe)
  • 4 cups of shredded unsweetened coconut (do not use flakes or reduced fat coconut.   It will not work)
  • cinnamon

Simple, right?! :)
Directions:

  1. Place your shredded coconut and about 4 dashes of cinnamon into a food processor and process until you have a nice and creamy coconut butter.
  2. Slice bananas into bite size chunks!
  3. Dip each slice into the coconut butter and coat both sides.
  4. Place each coated banana slice onto a piece of parchment paper.
  5. Sprinkle cinnamon onto each slice.
  6. Place in the freezer for about 30-40 minutes to initially set. (Move to fridge IF you have leftovers!)
  7. Enjoy!

Happy Healthy Valentines Day

We asked. You spoke. We LISTENED.

Moving forward, monthly Dr. Cotey or Dr. Amanda will be sharing recipes that we personally use in our everyday life.

Although we can talk/write for days about health, the purpose of this “Blog” is to provide you with what you want as well as to help us live out our purpose in life. There is an urgent problem facing our community where families are being compromised due to misinformation about health. We are determined to passionately restore family health and animate future generations.

In our office we restore health through our hands through a specific vertebral adjustment; however this is not the ONLY key to health. What goes in your mouth, in your brain and what you do with your body the rest of the day will contribute to your true level of health.  Let’s be honest, I can adjust you every day of your life, but if when you leave my office, you never work out, you visit a McDonald’s drive through for lunch, focus on all the negatives in life, eat more processed, packaged fake food and then sit and watch devil-vision (Television) for the rest of the night….I can NOT make you healthy.

This Blog is to be fun, honest and real. Sometimes it may be a bit longer, other times it may simply be a recipe we love.

So let’s do this! February means Valentines Day! Valentine’s Day means…CHOCOLATE! We love eating a healthy diet, but everyone one of us (Dr. Cotey included) enjoy Chocolate! So below are two of our family’s absolute FAVORITE recipes involving Chocolate!

*I don’t know if I need to do a disclaimer but if so here it is…Yes we eat a mainly wheat free, dairy free diet. We focus on cooking many paleo meals.  We are both doctors but we are also human beings people! We enjoy treats once in a while – icecream (Dr. Amanda), a bun (only Dr. Cotey) with our Brat and Beer (both of us) in the summer time. As we explain to our girls, treats are just that…Treats. They are not to be devoured in high quantities or high frequency. Many probably most of the recipes we will share are not our creation. They are however…super tasty and still fit into our personal lifestyle. These recipes bring us JOY! I hope they bring your family JOY as well!

The Original Peanut Butter Chocolate Chip Cookie Dough Bites Recipe

If you trust me and know I would never lie about peanut butter or chocolate…then just start gathering the ingredients now.

P.s. To make this even more Valentine’s Day Chocolate themed – use almond butter instead of peanut butter and add in 1 tablespoon of Cacao Powder…Now you have Chocolate Chocolate Chip Cookie Dough Bites! YUM!

Ingredients

  • 1 can of chickpeas, well-rinsed and patted dry with a paper towel1
  • 2 teaspoons vanilla extract
  • 1/2 cup + 2 tablespoons Natural peanut butter(Don’t even try with regular peanut butter! They’ll come out oily. You MUST use natural peanut butter.)
  • 1/4 cup raw honey
  • 1 teaspoon baking powder
  • a pinch of salt if your nut butter doesn’t have salt in it
  • 1/2 cup chocolate chips (can useCarob chips if you want)

 

 

  1. Preheat your oven to 350°F / 175°C. Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and the top to get the little chunks of chickpeas and process again until they’re combined.
  2. Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky.
  3. With wet hands, form into 1 1/2″ balls. Place onto a Silpat or a piece of parchment paper. If you want them to look more like normal cookies, press down slightly on the balls. They don’t do much rising.
  4. Bake for about 10 minutes. The dough balls will still be very soft when you take them out of the oven. They will not “set” like normal cookies.
  5. Store in an airtight container at room temperature (or in the fridge) for up to 1 week. (I have no personal thoughts on this as we make this and eat them all in one evening!)

As for this month’s smoothie – let me introduce you to our very own creation: Black Forest Cake – a Dark Cherry Chocolate Smoothie!
 

Smoothies are not an exact science. I love that I can move the flavor of almost any smoothie! So stop making smoothies so difficult – blend them – taste them – add more of what you want it to taste more like!

Here are some rough estimates but a complete ingredient list: (please use organic when possible…I will not be writing organic next to every ingredient!)

1 cup Dark Cherries (we love using frozen – helps make smoothie cold without watering it down)

– 1 TBSP Cacao Powder

– 1 ½ cups Coconut milk (we buy non-sweetened) (can use canned, tetra-pack or carton)

– ½ an Avocado (makes your smoothie SMOOTH!)

– Small handful spinach

– 2 scoops Whey protein

* Sometimes we add an extra scoop of Orgain Chocolate Protein Powder (already a little sweeter so will sweeten the taste up nicely)

*Personalize it!

* I always want extra dark cherries so the cherry taste is strong

*If you love the chocolate flavor – add more

* If you want it thinner – add more coconut milk

*If you want it fluffier – add more protein

Last Note – we have switched the fruit to Raspberries and it will still be amazing!
